
Ingredients:
- Fresh BC Spot Prawns (as many as you like)
- Pasta (pick your favourite)
- 3 Tbsps butter
- 2 Shallots
- Mushrooms
- 1-2 Tbsps garlic
- 1/4 White wine
- 1 Cup Cream
- 1/2 Cup Chicken Broth
- Reserved Pasta Water
Steps
- As you start your pasta water you can begin with the prawns. In a saucepan cook the prawns in butter just until pink and no longer translucent. You are better to undercook than overcook as they can become chewy. Set aside and off the heat.
- To that same saucepan, add shallots, mushrooms and garlic. Cook until the shallots and mushrooms are tender and fragrant.
- Add 1/4 cup white wine to the pan and stir until reduced.
- Add 1 cup of cream and 1/2 cup chicken broth.
- Throw in some fresh parmesan as well as 1/2 cup reserved pasta water.
- Add the pasta and Tah Dah!
I like to add some chilli flakes to mine for a little heat. Green peas are a nice addition if you need a little more veggie in your dish.
